BBQ Pulled Chicken

Ingredients:
  • 4 chicken breasts (2-3 lbs)
  • 8 oz Canned sliced mushrooms
  • (1/2) 18oz bottle Sweet Baby Ray's BBQ Sauce
  • 1/4 cup Water
  • 1/4 cup Brown Sugar
  • 1/4 cup Diced onion
  • 2 Tbsp Butter 
  • 1 Tbsp Chopped garlic
  • 1 Tbsp Worcestershire Sauce
  • 1  1/2 tsp Chipotle Chili Powder
Directions:
  1. Add all of ingredients to slow-cooker**.
  2. Turn on low and allow to cook for 8 hours.
  3. Shred chicken with a fork and stir.
  4. Allow to simmer for about 1 additional hour. If there is excess liquid, remove lid during this process.
Here are a few ways to enjoy:
  • On a pretzel bun w/sharp cheddar cheese & Batch No. 2 Whole Grain Mustard (as shown in photo), garlic-herb roasted homefries, and salad
  • As a topper for nachos w/guacamole, tomatoes, lettuce, Greek yogurt, and Mexican blend cheeses
  • In a salad w/fresh greens, diced avocado, tomato, Spanish rice, salsa, and Mexican blend cheeses.

**NOTE: Chicken can be used from thawed or frozen; from thawed used here. Water may not be necessary if used from frozen.
