Spicy Panko Crusted Mustard Chicken

Ingredients:
  • 4 chicken breasts
  • 1/4 cup Batch No. 2 Blackened Cajun Mustard
  • 3/4 cup Non-fat Greek yogurt
  • 1  1/2 cups Panko
  • Drizzle of olive oil
  • 2 Tbsp Flour
  • 1 tsp Paprika
  • 1 Tbsp Garlic powder
  • 1/2 tsp Chipotle chili powder
  • 1/8 tsp salt
Directions:
  1. Heat oven to 350*F.
  2. In a bowl, combine yogurt and mustard.
  3. In a shallow dish, combine Panko, flour, and dry spices. Drizzle with olive oil (this will help breading to "brown".
  4. Spray baking sheet in pan-release spray,
  5. Coat chicken in yogurt mixture, then in Panko mixture; place on baking sheet.
  6. Bake for 20 minutes and then flip; Bake for another 10 minutes or until chicken reaches an internal temperature of 165*F.
