Garlic-herb Roasted Homefries

Ingredients:
  • 2 large Baking potatoes
  • Drizzle of Olive Oil
  • 2 Tbsp Garlic powder
  • 1/8 tsp Salt
  • Ground black pepper (desired amount)
  • 1 Tbsp Italian seasoning
Directions:
  1. Heat oven to 425*F.
  2. Wash potatoes under running water, using hands or a veggie brush to remove any dirt.
  3. Leaving the skin on, cut the potatoes into pieces.
    1. Cut in half, lengthwise
    2. With flat side of one half on facing down; make three cuts lengthwise (so you have potato fries)
    3. Now cut in the opposite direction (so you have cube shapes)
    4. Repeat
  4. Place cut potatoes in a microwave-safe bowl and place a wet paper towel over the bowl, tucking the edges of the paper towel around the potato cubes.
  5. Microwave for 2-3 minutes, or until potatoes begin to soften.
  6. Place softened potatoes into a small mixing bowl; drizzle with olive oil.
  7. Add garlic powder, black pepper (I used a healthy amount here because I love pepper!), and salt. Mix to coat.
  8. Pour seasoned potatoes onto a baking sheet and bake for ~20 minutes, or until golden brown. I like to move the potatoes around about 15 minutes in.
  9. Once browned to your preference, remove from oven and pour back into your bowl. Toss in Italian seasoning.
