Chilled Veggie Tacos

Ingredients:
  • (4) 6" flour tortillas
  • 1/2 can corn, drained
  • 1 avocado, diced
  • 10 cherry tomatoes, rinsed and halved
  • 1 Tbsp Batch No. 2 Blackened Cajun Mustard
  • 1 tsp Garlic powder
  • 1 cup Shredded Colby-jack cheese
  • 1/4 tsp Sea salt
  • Sriracha (desired amount)
  • Ground black pepper (desired amount)​
Directions:
  • Sprinkle 1/4 cup cheese on each tortilla; In a stove or toaster oven, bake until melted.
  • In medium-sized bowl, combine corn diced avocado, halved tomatoes, mustard, sriracha (2 drops used here), seas salt (1/4 tsp used here), and black pepper.
